World's Best Cheesecake

Cheesecake has always been one of my absolute favorite desserts. I love the rich, smooth cream cheese filling, the crumbly, sweet graham cracker crust, and how incredibly easy it is to make. There are hundreds of cheesecake recipes out there. They range from the easy no-bake cheesecakes, to the cheesecakes with complicated fillings that you bake in springform pans.

This recipe is my all-time favorite cheesecake recipe, ever. It has two layers: the typical sweet cream cheese filling, and then a slightly sour, but oh so smooth sour cream topping. It requires some baking, but really is so easy, a child could make it. This is my grandmother's recipe, and it shows up at nearly every family function I go to.

Momma Day’s Cheesecake:

Crust:

  • 1 Ready Made Graham Cracker crust

Cheesecake:

  • 2 eggs
  • 1/2 cup sugar
  • 1 tsp vanilla
  • 8 oz cream cheese

Topping:

  • 8 oz sour cream
  • 4 tbsp sugar
  • 1 tsp vanilla

Cooking Directions:

  1. Preheat oven to 375°.
  2. Beat eggs until thick.
  3. Beat 1/2 cup sugar, 1 tsp vanilla, and cream cheese into the eggs, until smooth.
  4. Pour filling into the Ready Made crust.
  5. Bake at 375° for 30 minutes or until firm.
  6. Cool about 15-20 minutes until top is firm.
  7. Preheat oven to 400°.
  8. Mix sour cream, 4 tbsp sugar, and 1 tsp vanilla until well combined.
  9. Pour on top of cream cheese layer and smooth out.
  10. Bake at 400° for 10 min or until firm.
  11. Chill 6 hours or overnight

    Just an addition to your recipe, all the ingredients should be room temperature to avoid lumps! Oh yeah, if you use some chevre instead of cream cheese and add a little vanilla bean, this cheesecake becomes uber gourmet.

    The great thing about this recipe is that it doesn't make a 10 in., 5 pound cheesecake like the one I make. This one has good taste and a size that makes portion control much easier.

    This cheesecake is awesome. The sour cream is almost like a whipped cream topping. I have made this for years also from an old recipe I received from a friend. Very creamy cheese cake, simple to make and as good as the "NY Cheesecake" they advertise everywhere. You can leave off the sour cream topping to make the mixing part quicker and it still leaves a smooth, silky, creamy and sensual taste in your mouth. The cheesecake is more dense than the fluffy recipes. I can't just have one piece. You'll really be missing a sweet surprise for your taste buds if you don't give this recipe a chance.

    All these years I could have been making the World's Best Cheesecake instead of my time -consuming 24 oz's.- of- cream- cheese cheesecake. Never again, thanks
