World's Best Cheesecake

Cheesecake has always been one of my absolute favorite desserts. I love the rich, smooth cream cheese filling, the crumbly, sweet graham cracker crust, and how incredibly easy it is to make. There are hundreds of cheesecake recipes out there. They range from the easy no-bake cheesecakes, to the cheesecakes with complicated fillings that you bake in springform pans.

This recipe is my all-time favorite cheesecake recipe, ever. It has two layers: the typical sweet cream cheese filling, and then a slightly sour, but oh so smooth sour cream topping. It requires some baking, but really is so easy, a child could make it. This is my grandmother's recipe, and it shows up at nearly every family function I go to.

Momma Day’s Cheesecake:

Crust:

  • 1 Ready Made Graham Cracker crust

Cheesecake:

  • 2 eggs
  • 1/2 cup sugar
  • 1 tsp vanilla
  • 8 oz cream cheese

Topping:

  • 8 oz sour cream
  • 4 tbsp sugar
  • 1 tsp vanilla

Cooking Directions:

  1. Preheat oven to 375°.
  2. Beat eggs until thick.
  3. Beat 1/2 cup sugar, 1 tsp vanilla, and cream cheese into the eggs, until smooth.
  4. Pour filling into the Ready Made crust.
  5. Bake at 375° for 30 minutes or until firm.
  6. Cool about 15-20 minutes until top is firm.
  7. Preheat oven to 400°.
  8. Mix sour cream, 4 tbsp sugar, and 1 tsp vanilla until well combined.
  9. Pour on top of cream cheese layer and smooth out.
  10. Bake at 400° for 10 min or until firm.
  11. Chill 6 hours or overnight

This headline, World's Best Cheesecake, seemed like so many other recipe headlines that I almost ignored it. BUT, I made this cheesecake last night and OMG, it definitely is the best -- creamy, tasty, and the right size! Thank you so much!!

Instead of using a ready-made shell, try mixing crushed Nilla wafers and melted butter. Girl Scout Trefoils work as well (if not better).

Thanks everyone, for your wonderful comments!

Alex - Yep, very good point. There are tons of thing you could add to make your cheesecake even more amazing... vanilla bean, melted chocolate, etc. Of course, it's also amazing plain. :)

stinkycat - Yep, this one's a perfect size, so you can't pig out *too* much on cheesecake. ;)

elle - You should... like I said, it's super easy and incredibly delicious!

Son - Okay, fine. I'll make you more. Eventually.

JLO - So glad to hear you enjoyed it! I'll be sure to send more goodies with Son every time I bake. :D

miss peachez - It certainly is delicious!

chaherazod - Yep, the sour cream topping is a nice light contrast to the rich cream cheese filling. But don't leave it off... it's the best part! (My favorite part, anyways. ;) )

Shelby - Sadly, I've met a few people who don't like cheesecake at all... but more for us cheesecake lovers!

hellokitty - I hope you love this!

SAS - Wow, that's a lot of cream cheese. I'll bet you'll love this one!

Isky, acs, samibarnard, johna_lee - I'm so glad to hear you all tried it and loved it. You are very welcome! :)

rox - That sounds delicious! Or, you could also try crushed graham crackers mixed with butter and sugar, or even crushed Oreo's if you want a chocolatey crust.
