How healthy are your beans?

Growing up, I admit, I was not a big fan of beans.  I didn't like beans in any variety.  The thought of beans conjured up images of red colored beans in a soppy, sweet sauce, which often accompanied hot dogs.  Much like sauerkraut, this did not appeal.  Needless to say, I've grown up and so have my taste buds.  In short...I'm a big fan of 'the beans.'

Beans are a wonderful food.  They come in many varieties and are very beneficial to maintaining a healthy diet.  They help reduce cholesterol and  provide a ton of fiber.  Moreover, they are a low glycemic food that is low in fat and rich in complex carbs for long lasting energy.  When combined with nuts, seeds or grains, they form a complete vegetable protein. Lastly, they are a great source of Vitamin B and Iron.

So what beans really pack a powerful punch?  Below is a breakdown of popular varieties, including info on calories, as well as protein, fat, carb and fiber contents per 1 cup serving.

* All values are based on a 1 cup serving of canned and drained beans.  Soybeans, however, are measure as prepared edamame.

Personally, I'm partial to chick peas, edamame (soybeans) and kidney beans.  Soybeans/edamame are actually the only beans that contain all nine essential amino acid to form a complete protein.  Chick peas are great in salads and great for Mediterranean dishes (think hummus), and kidney beans are the highest in fiber and a great addition to Turkey Chili.

    Let me count the ways. Cuban black bean soup. Big fat limas. Pintos saddled beside barbecue. Red beans and rice. Thick white bean soup on a cool autumn day. Southwestern Corn & Black Bean Salad. Greek green beans with potatoes.

    So good, so filling, and so inexpensive!

    I love pinto beans. However my one and only way to eat them is a bean burrito. I cook them with chili powder and garlic, put 1/2 cup on a whole wheat wrap with lowfat sour cream and salsa(sometimes lowfat cheese) and pair it with a salad. This keeps me going all afternoon.

    In these economic times, beans are it! I have been making big batches of black beans from dried, and then freezing them so they are ready to add to any recipe. A quick bean side, or mixed in with a casserole, or used instead of ground meat in a variety of recipes. Go beans!

    Fava beans and cannellini beans! The former is great in Middle Eastern dishes, the latter in Italian!

    I'm a new fan of black beans. It's great for stretching out meat dishes. I'm lazy and "pay up" for the organic-already-prepared canned refried beans. Because it's nutrional value is so high, it can power me through a good workout. I love food that does that :)

    Black beans are delicious. I make a black bean soup that is delicious. Even those who do not care for beans love this soup.

    Ingredients:

    2 cups black beans

    9 1/2 cups chicken broth

    1 teaspoon olive oil

    2 large onions, diced

    3 or 4 cloves garlic, minced

    2 large stalks of celery, minced

    2 large carrots, minced

    3 tablespoons soy sauce

    1 1/2 - 2 teaspoons ground cumin

    1/2 teaspoon fresh ground pepper

    1/2 teaspoon salt

    Good hot sauce if desired

    Good salsa and a dollop of sour cream

    Directions:

    1. Soak beans for 8 hours in cold water.

    2. Drain beans, bring to a boil in broth, then simmer 2 to 3 hours (until beans are completely cooked).

    3. Saute onions, garlic, carrots and celery for 10 minutes in olive oil.

    4. Add soy sauce, cumin, pepper and hot sauce and simmer for 30 minutes.

    5. Put half the soup in batches in food processor then blend together and serve.

    Put a dollop of sour cream and fresh salsa on top of each serving, if desired.

    I love beans! I put kidney beans in my turkey taco salad and think it really makes the meal. I also love black beans when I go out for mexican food (even though I really want the refried beans ;-) and I like red beans in chili. I also love baked beans. ;-)
