No, that isn't a typo! You can have a pumpkin
pie-inspired breakfast. And get this -- it's actually healthy!
Now that it's finally Fall, pumpkin is making appearances
everywhere. In soups, shakes, ice cream, you name it! You too can
take advantage of this seasonal flavor -- and reap its nutritional benefits!
If you are a pumpkin lover, this recipe is for you. Ladies and
gentlemen, I bring you a ‘ The Daily Balance ‘ ORIGINAL! - Pumpkin Pie French
Toast.
You’ll need (serves 1):
1/8 cup milk
1/8 cup egg beaters
1/8 cup pumpkin puree
few dashes of pumpkin spice, to taste
Mix all of these ingredients in a bowl
Take 1 slice of whole wheat bread and douse into bowl, covering both sides with wet mixture. Cook in a skillet on medium, about 1-2 minutes each side.

You now have pumpkin french toast, which would be quite tasty
as-is with a simple drizzle of maple syrup.
But if you are feeling adventurous, why not make it pumpkin PIE
french toast?
In a microwavable cup, combine a few tablespoons of vanilla pudding (I used JELLO’s), a few tablespoons of pumpkin puree and a dash of pumpkin spice. Add a splash of milk and microwave for about 30-45 seconds.
Spread on top of french toast and serve warm. Top with a dollop of whipped cream and a dusting of pumpkin pie spice.
