DINNER FOR TWO...ON A BUDGET!

Dinner for two? Right this way. Well I read a few of the other articles and am extremely jealous...Date Night? Okay in my house date night consists of me or my husband "mad-dogging" the boyfriend's of my daughter's. Or maybe it is just that moment when we go look at the calendar for the days ahead!

Now, what I can help you with is "Dinner's on a budget", that is the topic at hand. My favorite is Chicken. I buy a whole roasted chicken for $5 at the supermarket, then I grab two cans of chicken broth which is usually about $2 and then throw in chopped celery, carrots and a can of stewed tomato's, that will all cost you about $3. You can even do away with the broth if you are talented with spices. If you wish, toss in a can of corn and a bag of wide egg noodles, both will cost you around $3, so there you have it a homemade chicken noodle soup that will last you around three days and three meals all for $10.00

The second night I like to bake the frozen biscuits (usually 8-10) and pour the leftover soup on top of the biscuits, yum! The third day is simple, consists of leftover chicken made into chicken salad, either in a green salad or as a spread on sandwiches, both are good and cheap!

Now that we have the stay at home dinner figured out, how about the "Date Night" everyone raves about? If you are lucky enough to have a date night with the hubby or wife then here is a brainstorm of an idea. Head on over to Mc Donald's for their dollar menu and grab double cheeseburger's for two, a super sized large coke to share, super sized french fries, dinner ready now you just need to grab your blanket and stop by the liquor store to pick up a $6 bottle of "Barefoot" Pinot Grigio, and you have a romantic night out.

No sitter? Hate to cook? Or really are broke, no worries, just make a couple simple sandwiches, grab a couple beers or wine or even waters and retreat to the bedroom. Have the kid's make you a sign that reads, "Please Do Not Disturb" and pop in a 2 hour movie for the munchkins (The one's you usually try to keep them from watching are the best!) and you have a "Date Night" Small babies? Allow about an hour instead of two, so make it quick but sweet!
