You will need:
1 flour tortilla for as many people as you plan to serve
1/2 a cup shredded mexican cheese for each tortilla
1/3 of a cup cooked chicken (cubed) for each tortilla
1/3 of a cup onion,chopped for each tortilla
1/3 cup green pepper,chopped for each tortilla
chilli powder
ground black pepper
garlic powder
about a teaspoon olive oil
fresh chopped cilantro and sour cream to garnish
Heat olive oil in a non stick skillet over medium heat. Add onions and peppers and stir fry until onions are golden brown. Remove onions and peppers and store them on a plate for now. Take one flour tortilla and fill one side with mexican cheese , chicken, onion and pepper. Sprinkle chili powder, black pepper and garlic powder to taste. Fold tortilla in half over filling and butter one side.
Carefully place tortilla, butter side down, into frying pan. Cook until that side is golden brown. Butter other side and flip frying until golden brown and cheese is melted. Remove tortilla and cut in half on a plate around a dollop of sour cream topped with chopped cilantro. Enjoy!
