What do you do with leftover pie trimmings?

When I was little I loved to
help my Mom bake holiday pies. I would watch her skillfully roll
out the dough into a perfect circle then gently transfer it to her
pretty red pie plate. My little fingers mimicking her movements
with my own small piece of dough. Of course my favorite part
came when my Mom would trim the pie edges - I knew those odd little
pieces of dough would become a sweet treat later on.
My Mom would take the remaining dough, cut it into strips, brush it
with butter and let my sisters and I sprinkle it with cinnamon and
sugar. My sisters and I called them "pie crust cookies."
These sugary strips of dough were often devoured with record speed,
and at times favored more than the pie.
What do you do with your leftover pie trimmings? Has your family
ever made "pie crust cookies"?

We did 'Pie Crust Cookies" with butter, sugar and cinnamon as well!

we did the same, but called them cinnamon pie strips - they were the best part of the pie making

Yep, we sprinkled sugar and cinnamon on them and baked them in the oven. My mom would usually forget about them - but i never did! I always reminded her.

I just put mine in the oven with cinnamon and sugar. I'll add the butter next time. Sounds yummy!

My Mom used to roll out the remaining dough into a free form rectangle, spread it lightly with butter then top with a sprinling of cinnamon and sugar. We would roll it up, jelly-roll style and slice it into rounds. Lay them on their cut sides in an extra pie pan or cookie sheet and bake. They look like mini cinnamon rolls! Yum.

That sounds interesting. I would have never thought of doing that, but now I can the next time I make a pie!!!! Sounds really good!!!!!

I usually bake them with a brushing of butter and the boys spread them with jelly. They usually crowd in the kitchen when I'm baking pies!
