    Happy One Pot Wednesday!

The Crock Pot Moms on CafeMom are raving about this easy recipe for Chicken Cordon Bleu. It combines chicken breasts with ham, Swiss cheese, and stuffing.

Mmmm...I might have to take a night off from our less meat resolution!

*If you're watching your weight in the new year, significantly reduce the amount of melted butter and soup in this recipe. All you need is enough to slightly moisten the stuffing mix.

    Crock Pot Chicken Cordon Bleu

6 pieces boneless, skinless chicken breast

    6 pieces thinly sliced ham

    Swiss cheese, shredded or sliced

1 can Cream of Chicken or Cream of Mushroom Soup

1 box of Stove Top Stuffing

    1 stick of butter, melted

Combine stuffing mix with melted butter and soup. Spray the bottom of the crock pot with cooking spray to keep chicken from sticking. Place chicken on the bottom, then top with ham, Swiss cheese, and stuffing-butter-soup mix. Cook on low for 4 to 6 hours.

Nothing else--save for maybe apples and peanut butter in a pinch--could have made for as sweet an
