Green Chile Chicken EnchiladasThe complete recipe for Green Chile Chicken Enchiladas on Yahoo! Shine. - 2 cups shredded rotisserie chicken
- 1½ cups shredded Mexican or Cheddar cheese, divided
- ½ cup Hidden Valley® Original Ranch® Dressing
- ¼ cup sour cream
- 2 tablespoons diced green chiles, rinsed and drained
- 4 (9 to 10-inch) flour tortillas, warmed
- Mix together chicken, ¾ cup cheese, dressing, sour cream and green chiles in a medium bowl.
- Divide mixture into 4; spoon mixture along center of each tortilla.
- Roll and place seam-side down in 9-inch baking dish.
- Top with remaining ¾ cup cheese.
- Bake at 350°F for 20 minutes or until cheese is melted and lightly browned.

i usually use corn tortillas. if you fry them up just a little in oil to get them plyable, then they roll real easy after filling with the chicken and cheese. you can fit more in the baking dish and they are tastier to me, its my preference!0 of 0 people found this review helpful-

My girlfriend and I needed something quick for dinner. I looked up chicken, quick and easy and found this. put it together with some enchilada sause spooned over top. We also doubled everything with thoughts of leftovers. We had them but tey caused a riff when we both wanted to take them to work. Best thing we have since christmas. AWESOME! I stirred a can of black beans into the mixture too and it was great! I also had some enchilada sauce in the pantry that I spooned over the top of each one. I didn't have any green chiles so I had to leave that out but they were still really good. Use whole wheat tortillas and low fat sour cream, cheese, and ranch....and this is a very healthy recipe!
