    Grilling eggplant slices and sweet peppers gives them a robust smoky flavor that's perfect for this meatless Mediterranean sandwich recipe. The tanginess of the Dijon mustard and the creaminess of the goat cheese go well with the grilled vegetables. With the melding of so many flavors in one sandwich, you won't know that it's a vegetarian meal. Serve with a glass of iced tea and enjoy the day.

    Ingredients

    • 2 medium green, red, and/or yellow sweet peppers
    • 1 medium eggplant (about 12 ounces), cut into 12 slices
    • 1 tablespoon olive oil
    • 8 1/2-inch-thick slices French bread
    • 4 ounces soft goat cheese (chevre)
    • 1/4 cup Dijon-style mustard

    Directions

    1. 1Quarter the sweet peppers lengthwise; remove and discard the stems, seeds, and membranes.
    2. 2Brush eggplant slices with oil. Grill eggplant slices and sweet pepper quarters on the rack of an uncovered grill directly over medium-hot coals for 4 minutes. Turn and grill 3 to 5 minutes more or until eggplant is tender and sweet peppers are slightly charred. Remove vegetables from grill; set aside.
    3. 3Spread 1 side of each French bread slice with goat cheese and mustard. Layer 3 eggplant slices and 2 sweet pepper quarters on 4 of the bread slices. Top with remaining bread slices. Serve warm. Makes 4 servings.

      the mediterranean is a pretty big place.

      there are more than 20 countries boundaring the mediterranean and most of these countries use pita bread in their dishes, not french bread.

      since Dijon mustard originates in the city/region of Dijon in france, this is most likely a french recipe.

      also the author said "cheese (chevre)" and the word chevre (written with a small symbol on the middle e) is a french word which means goat. So definitly the recipe the author refers to is more of french than of oriental cuisine.

      calling this recipe a mediterranean one is very misleading because usually mediterranean refers to greece and phonician cultures and descendents whereas France is more commonly referred to as a European country rather than a mediterranean one, eventhough it has a coast on the mediterranean.



      there is a russian variation of this recipe: with eggplant (grilled also)mayo, tomatoes and garlic and olive oil instead of the veggies used here.

      will the author call that a "continental recipe"?

      This looks great - just a few substitutes. Instead of egg plant, substitute hamburger. Instead of tomato, substitute American cheese topped with swiss cheese. Instead of bread, substitute a pizza. Perfect.
