    You'll think you've died and gone to dieter's heaven after one bite of this rich and delicious Italian pasta dish. Nonfat evaporated milk is the secret behind keeping the creamy, luxurious carbonara sauce low in fat and calories. And turkey bacon makes a savory, smoky, light substitute for the real thing. Peas and red bell peppers add fresh flavor and color, while a little crushed red pepper adds a touch of heat.

    Ingredients

    • 8 ounces linguine or spaghetti
    • Nonstick spray coating
    • 2 slices turkey bacon, sliced crosswise into strips
    • 1 egg, beaten
    • 1 cup evaporated nonfat milk
    • 1/2 cup frozen peas
    • 1/4 cup chopped red sweet pepper
    • 1/4 teaspoon crushed red pepper
    • 1/2 cup grated Parmesan cheese
    • Black pepper

    Directions

    1. 1Cook linguine or spaghetti according to package directions.
    2. 2Meanwhile, spray a medium saucepan with nonstick coating. Cook turkey bacon in saucepan until crisp and light brown. Drain on paper towels. Wipe saucepan clean with a paper towel.
    3. 3For sauce, in same saucepan combine egg, evaporated milk, peas, sweet pepper, and crushed red pepper. Cook and stir over medium heat just until the mixture coats a metal spoon (about 6 minutes). Do not boil. Stir in bacon and half of the Parmesan cheese. Heat through.
    4. 4Immediately pour sauce over hot cooked pasta; toss to coat. Transfer to a warm serving platter. Sprinkle with black pepper and remaining Parmesan cheese. Makes 4 servings.

      I am so sick of marinara sauce I could barf.Even pizza turns my stomach.This recipe sounds wonderful to me! I wounder what it would be like with mozzarella cheese?

      Why don't you include the nutritional information with your recipes. I will not try a recipe unless I know what I will be eating, fat, carbs, sugar etc. Thanks

      Thanks Pooh, I only have 80mg of cholesterol to spend a day. So this recipe is out. Then I read the rest of the reviews and won't try it.

      I tried this recipe the other night and we ended up ordering pizza. The sauce does not come out right at all. I had the stove on as low as it could go and the egg cooked a little bit. If you like crushed red pepper, then use the amount above. It gives it too much of a kick. The sauce tasted too milky for our liking, in addition with the teeny egg parts and heavy crushed red pepper kick back...equals what kind of pizza do you want. Good luck if you try it. It was not a good experience for us.
