Sate is a traditional Asian dish that consists of preparing cubed marinated meat or vegetables, placing them on skewers, and then grilling, broiling, or roasting them on an open fire. The meat is marinated in a sate marinade that may consist of any variety of spices. The meat in this recipe is beef sirloin. This sate is served with a peanut sauce, which is very common for this type of Asian dish.
Ingredients
- 1 pound lean boneless beef sirloin
- 1 small onion, cut up
- 2 tablespoons soy sauce
- 2 tablespoons lime juice
- 1 teaspoon sugar
- 1 teaspoon ground cumin
- 1 clove garlic, minced
- 1/3 cup chicken broth
- 2 tablespoons peanut butter
- 1 tablespoon molasses
- 1 teaspoon soy sauce
- 1/4 teaspoon crushed red pepper
- 1 clove garlic, minced
Directions
- 1Cut beef into 1-1/2-inch pieces. Place in a plastic bag set in a deep bowl.
- 2For marinade, in a blender container or food processor bowl place onion, the 2 tablespoons soy sauce, lime juice, sugar, cumin, and 1 clove garlic. Cover and blend or process until smooth. Pour over meat in bag; close bag.
- 3Marinate meat in the refrigerator for 4 hours, turning bag occasionally. Drain meat, reserving marinade.
- 4For sauce, in a saucepan stir broth into peanut butter. Stir in molasses, the 1 teaspoon soy sauce, crushed red pepper, and 1 clove garlic. Cook and stir until heated through. Keep warm.
- 5Thread meat onto four 8-inch skewers. Arrange on the unheated rack of a broiler pan. Broil 3 to 4 inches from the heat for 7 to 9 minutes or to desired doneness (160 degrees F for medium doneness), turning occasionally. Serve sauce with meat for dipping. Makes 4 servings.

You mix the marinade with the peanut butter to make the satay sauce.

Eehh...other than the garlicky steak, none of this sounds too appetizing.

Why do you reserve the marinade? The recipe doesn't tell you what to do with it ...
