Flavored with the sweet taste of fresh ginger, toasted sesame seeds, and a hint of spicy red pepper, this recipe combines tender grains of rice, tofu, and green onions with easy to prepare frozen stir-fry vegetables and pre-made stir fry sauce. Tofu is an excellent source of protein and absorbs the flavors of the foods you are cooking with. This healthy vegetarian tofu stir-fry is ready for your table in less than 30 minutes.
Ingredients
- 1/4 cup finely chopped peanuts
- 1 tablespoon sesame seeds
- 1 teaspoon grated fresh ginger or 1/2 teaspoon ground ginger
- 1/8 teaspoon crushed red pepper
- 1 12-ounce package firm or extra-firm tub-style tofu (fresh bean curd), drained and cut into 1/2-inch cubes
- 1 tablespoon cooking oil
- 1 16-oz. bag frozen stir-fry vegetables, thawed
- 2/3 cup bottled stir-fry sauce
- 2 cups hot cooked rice
- 2 green onions, thinly sliced (1/4 cup)
- 1 medium orange, cut into 8 wedges
Directions
- 1In a bowl combine 1 tablespoon of the peanuts, the sesame seeds, ginger, and red pepper. Add tofu; toss gently to coat.
- 2Heat oil in a large skillet over medium-high heat. (If necessary, add more oil during cooking.) Add tofu mixture to skillet. Cook, stirring gently, for 3 to 4 minutes until sesame seeds are toasted and tofu begins to brown.
- 3Remove tofu mixture to a bowl. Add vegetables to skillet; cook and stir for 2 to 3 minutes or until heated through. Add stir-fry sauce; cook and stir gently until mixture is bubbly. Stir in tofu; heat through. Serve over rice. Sprinkle each serving with some of the remaining 3 tablespoons peanuts and the green onions. Serve with orange wedges.

This was great, but i couldn't find sesame seeds in the grocery store (where are they???) so i used a couple dashes of sesame oil. YUM!
