    Tilapia is a versatile whitefish that the whole family will love. This recipe is healthy, easy, and economical, which makes this dish a great catch. This fish is pan fried and transferred to a serving platter. Grapes, dried fruit, green onions, and spreadable fruit are then cooked in the same pan and poured over this sweet-savory fish.

    Ingredients

    • 4 4-oz. fresh or frozen skinless tilapia or sole fillets
    • Salt and pepper
    • 2 Tbsp. cooking oil
    • 1 cup seedless green grapes
    • 1/2 cup tropical blend mixed dried fruit bits
    • 1/3 cup sliced green onions
    • 1/3 cup apricot spreadable fruit
    • Cooked brown rice (optional)

    Directions

    1. 1Thaw fish if frozen. Rinse fish; pat dry with paper towels. Season with salt and pepper.
    2. 2In a 12-inch skillet heat oil over medium-high heat; add fish. Cook 3 to 4 minutes or until fish flakes easily, turning once. Meanwhile, halve grapes.
    3. 3Transfer fish to platter; keep warm. Add grapes, fruit bits, onions, and spreadable fruit to skillet; cook and stir 2 minutes. Season to taste with salt and pepper. Serve sauce over fish.

      Tilapia are native to Africa and most of those imported to the U.S. are now farmed mostly in Central and South America. I've never heard of tilapia from China. And they are not scavenger fish as noted by Sharon. Some people will post anything.....

      Tilapia (there are hundreds of fish in Tilapia family) consume floating aquatic plants, thus helping purify the water by consuming vegetation and plants and greatly reducing purification costs. It can survive in less than perfect water because it cleans it. And the fish is completely clean and is considered one of the most expensive ones. This doesn't mean it's a scavenger. Lobsters and crabs are however, which doesn't makle them any cheaper or less tasty.

      Just make darn sure that IF you purchased frozen Tilapia that you read the "Country of origin" on the back side of the package. A LOT of Tilapia is flash frozen in China and sent down through the food chain to be packaged elsewhere...luckily, the packaging must show country of origin. Do YOU want to ingest ANYTHING grown in China where safety standards, etc., are simply not a priority for thier masses, let alone you?! There are numerous recent examples of Chinese food scares, not to mention the pet food fiasco of a few years ago! Buy and shop American as your priority to a healthier outcome.
