    Top ideas for dinner tonight

    Seasoned beef patties are grilled, then topped with cheese and mayonnaise for these spicy burgers. The heat comes from two sources, the chipotle in adobo and the jalapeno peppers, hence the "two-pepper" title. The smoky flavor of the chipotle lends itself particularly well to grilling, which results in a burger that is completely penetrated with flavor. Top this burger off with slices of avocado to both complement the Tex-Mex spices and relieve a little of the heat.

    Ingredients

    • 1/2 cup mayonnaise or salad dressing
    • 1/2 to 1 chipotle pepper in adobo sauce, finely chopped
    • 1/3 cup finely chopped onion
    • 3 to 5 fresh jalapeno peppers, seeded and finely chopped
    • 4 cloves garlic, minced
    • 2 teaspoons Cajun or Creole seasoning
    • 1-1/2 pound ground beef
    • 4 ounces Monterey Jack cheese, sliced
    • 6 hamburger buns, split and toasted

    Directions

    1. 1Combine mayonnaise and chipotle pepper. Cover and chill until serving time. In a large bowl combine chopped onion, jalapeno, garlic, and Cajun seasoning. Add beef; mix well. Shape into six 3/4-inch patties.
    2. 2Place patties on the unheated rack of a broiler pan. Broil 4 to 5 inches from heat for 12 to 14 minutes or until done (160 degree F), turning once. Top with cheese slices; broil 30 seconds more or until cheese slices are melted. Serve on buns with mayonnaise-pepper mixture. Makes 6 servings.
    3. 3 *Note: Wear plastic gloves when chopping hot peppers.

      The added fat is coming from the chipolte mayo. I do plan on trying these but will likely cut out or at least not use very much of the mayo. Maybe I'll replace the mayo with a spicy guac.

      Guess what Mike G? Not everybody is participating in "lent". Would you share the same concern with printing non kosher recipies for fear that orthodox jews might not get much out of the article? I doubt it. Nobody cares about the fact that you choose to eat pizza on friday instead of burgers for a few weeks each year and act like you are some kind of martyr. Personally, I am going to fire up the grill.
