    For the sour cream lemon cake, you'll need:

    3/4 cup sour cream
    4 eggs
    1 1/4 cup sugar
    1 1/4 cups unbleached all-purpose flour
    1 cup whole-wheat pastry flour
    3 teaspoons baking powder
    Pinch of salt
    Zest of 1 lemon
    3/4 cup canola oil

    Directions:

    1. Preheat the oven to 350 degrees.Grease a 9 x 13" glass baking dish and set aside.
    2. In a large mixing bowl, combine the sour cream, eggs, and sugar. Stir in the flour and baking powder, salt, and zest, mixing just until combined. Add the oil, and fold in until the batter is smooth.
    3. Pour into the baking dish and bake for 30 minutes or until a toothpick inserted in the center comes out clean. The top will be a very light golden brown. Set aside and allow the cake to cool completely.
