Rocco Dispirito is one of my favorite chefs and a lot of fun around the outdoor grill. Today he's sharing some of his favorite summer grilling recipes, secrets and tips with Make Home A Haven.
Rocco's summer grilling tips:
#1 Always marinate. It brings out the best of whatever you're grilling. Simple orange marmalade is an easy go to marinade because it has a good balance of sweet and sour.
#2 Salt food with a far and high toss for even coverage. (Watch how he does it in this episode.) If you salt your food directly over it, you'll get uneven salt patches.
#3 Pour olive oil on a cloth napkin and use it to prep and make your grill non-stick. Rocco also demonstrates this cool tip in this episode.
#4 Rocco says always cook on a piping hot grill. If you put food on a grill that isn't properly preheated: all your food will stick and fall apart when you try to flip it.
Detailed recipes from this episode for the Charred Beef Burgers with Baba Ghanoush and the Berry Yummy Frozen Pops are available in Rocco's new book, or from the links below.
