    5 tricks to grill your way to better health

    This time of year my husband is chomping at the bit to grill, grill, grill! He wants to grill everything-which is fine by me because not only is grilling a super-quick way to cook, but when it comes to lean proteins it guarantees flavorful, juicy results-without having to add a lot of fat or calories. (Or do extra dishes!)

    As a nutrition editor I've read some studies that suggest cooking meat at the high temperatures you use to grill (as well as broil and fry) produces compounds linked with cancer-heterocyclic amines (HCAs) and polycyclic aromatic hydrocarbons (PAHs). But the risks associated with eating grilled meats are relatively small when you look at the big picture.

    So we're still firing up the grill and using tricks that have been shown to reduce HCAs and PAHs. Here are 5 tips to grill your way to better health:

    1. Add cruciferous vegetables. Cruciferous vegetables, such as broccoli and cabbage, contain sulforaphane, a compound that may help the body clear DNA-damaging compounds more quickly. In one study, men who ate about 2½ cups of Brussels sprouts every day for three weeks reduced their DNA damage significantly.     2. Marinate meats. Marinating can reduce HCA formation by as much as 92 to 99 percent, according to the American Institute for Cancer Research (AICR). One study in the Journal of Agriculture and Food Chemistry showed that marinating red meat in beer or wine for two hours significantly reduced HCAs. Scientists believe the antioxidants in these marinades block HCAs from forming. (Find our top pick for the healthiest brand of bottled BBQ sauce here.)

    Try fish. Seafood forms less HCAs than beef, pork and poultry because of its lower amino acid content and shorter grilling times. (Get 15 healthy grilled fish and seafood recipes.)

    Go lean. If you prefer meat or poultry to fish, trim excess fat, remove poultry skin and select lean cuts of meat to minimize flare-ups. Flare-ups happen when fat drips onto the heat source and catches fire. This causes PAHs-compounds that have been associated with increased risk on breast cancer-to form and accumulate on your food. You can also keep a squirt bottle of water near the grill to quickly douse any unexpected flare-ups.
    5. Flavor meats with rubs. A Kansas State University study found that rubbing rosemary-an herb known for its high level of antioxidants-onto meats before grilling cut HCA levels by up to 100-percent.       Where does this come from?
      Whose big picture? And compared to what - breathing diesel behind a bus all day long?
      Seriously, if the author could provide feedback on how to get to this conclusion, and whether the resources are balanced, that would be good to know. Last time, some years ago, I looked at the chemistry it was fairly straightforward - grilling fats in presence of proteins/amino acids leads to formation of carcinogens.
      Of course the body deals with nasty chemicals all day long - just a choice of whether you want to add some more with your grilled foods.
      That said, the points about 'mitigating'effects of grilling were interesting.

      we all have cancer cells. in some people it will become malignant but not in others. It just needs something to trigger it. before Doctors give you any steroidal medication you have to get a blood test done to determine your risks. My wife had a girl friend who had started working out and took somekind of steroid and died just months later of cancer. It had spread throughout her body.

      It's ok to do not eat meat if you love animals. Who want to eat his own pet, for example? If you understand animals, probably never eat them again. If you have nothing else to eat, you have no choice... you will eat anything, is instinctual. But till then... Anyway, all health problems comes from lack of mental cleanliness. You can eat just nectar & ambrosia, if you have just s--- in your mind, you can not be very healthy. Read Eckhart Tolle, Michael Odoul...

      remember when wine was bad for you, and now is good for you again. something smells fishy. They're using scientists to move the markets.

      Next month they'll say cooking on an electric range is safer. Because electric usage will decline due to grilling and thus the Electric Co. will loose revenue.

      I marinate lots of things I make my own. soy sauce,garlic,dryed onions brown sugar and some water.It is so good chicken breasts pork chops or a cheap cut of beef steak.I let mind marinate at least 24hrs. enjoy we love it.

      It's an old wives tale. There is absolutely no evidence to suggest that grilling causes cancer so that debate is dead. Why anyone would grill on a gas barbeque is just a sin. You could could cook something quick on one which is OK, but having an actual cookout and feeding your guest food without the real charcoal taste is blasphemy to grilling.

      Dido stfu, Meat is why humans have intelligence. Just look at all other animals on this planet, the intelligent animals eat meat, they are predators that hunt. Most prey animals eat plants. Prey animals need more nutrients for digesting all that roughage (hence cows having 4 stomachs). Meat is easier to digest leaving more nutrients for their brains.
