Sometimes something that you are so over can turn into something great. Here's how to use what you have to make a great dinner with leftovers. In fact, I had this for dinner last night.
• Chop up leftover vegetables, like steamed cauliflower, roasted corn, and broccoli.
• Add it to greens and tomatoes.
• Top it with your favorite dressing.
It's easy-breezy and quick, especially on nights when you get home late and don't have the energy to make a complicated dish.
