    Top Three Ways My Kids Get a Nutritious Breakfast Before School

    Are busy school schedules getting in the way of well-balanced, dairy-enriched meals for you and your family? With two young boys of my own, I know how difficult it can be to get everyone well-fed, especially before school. I have found that having my refrigerator well stocked with the essential low-fat and fat-free dairy products is the key to getting started. Check out my helpful tips for some "on-the-go" dairy ideas for those busy school mornings and some of my "Fall Favorite Breakfast Recipes" that follow.

    Here are three on-the-go dairy tips and recommendations for those busy school mornings:

    1. Stock the refrigerator with a variety of low-fat yogurt. Yogurt is a great source of calcium and other nutrients that can be eaten quickly. It is also great with fresh berries, granola and even on top of pancakes.
    2. Low-fat milk is another perfect source of dairy when time is of the essence. Whether it is enjoyed in a bowl of cereal or oatmeal, blended into a smoothie with fruit or just poured into a tall glass, it is a must-have. Mix things up with low-fat chocolate or strawberry milk for variety.
    3. Cheese is ideal for any time of the day, which makes it a definite must-have in the refrigerator. A cheesy scrambled egg tortilla roll-up is great to eat on-the-go. Just scramble up an egg or two, sprinkle with cheese, place into a whole wheat tortilla, roll it up and off you go! Have cheese cubes and cheese sticks on hand for quick snacks as well.

    Enjoy these Fall Breakfast Favorite Recipes:

    Yogurt and Banana Spice Muffins

    Spice Cake Mix, 18.25 oz size
    6 oz container low-fat vanilla yogurt
    2 eggs
    2 medium overly ripe bananas, mashed with fork
    ¾ Cup water
    2 Tablespoons powdered sugar for garnish if desired

    1. Preheat oven to 350 degrees Fahrenheit. In a large bowl, mix cake mix, yogurt, eggs, bananas and water until well combined. Spoon batter into 24 traditional size muffin cups that have been lightly sprayed with non-stick cooking spray. Bake for 20-35 minutes, or until a toothpick comes out clean from center of muffin.

    2. Remove from oven and let cool completely. Garnish with powdered sugar, if desired.

    Makes 24 muffins

      Well, I guess this is all well and good, but what about those who are lactose intolerant? Childhood food allergies have skyrocketed.I think it's more nutritious to give them fruit and whole grain breads with a choice of whole fruit jam or nut butter anyways...

      i am a mother of 4 kids,and honestly i hate mornings esp. making breakfast. I work during the night and comes home at abt. 7am 7/24,so what i do is make the breakfast at night( ihave a restaurant) and bring it home in the morning. and thank you for the tips, i think i just needed some tips to make my motherhood work and not complain a lot.

      My son has a protein shake every morning. He believes that he hates breakfast. I've tried everything - from healthy whole grain muffins, to oatmeal to egg sandwiches, to turkey bacon. Everything possible.
      Now, he gets 8 ounces of skim milk, a heaping helping of cho. whey protein powder mix, a handful of baby spinach, two strawberries and a squirt of hershey's choc syrup. A small squirt, mostly for color.

      he thinks he's drinking a chocolate milkshake; I know he's got nutrients to get through his morning. And the berries cover the taste of the spinach. It's a good way to add iron w.o a fight!!

      Thanks for the great breakfast ideas! I was just reading a great blog http://buzz.prevention.com/community/lisa-roo/corn-dogs-for-breakfast, where the writer was doing a research project at a local school and witnessed the kids eating corn dogs for breakfast. With so many kids eating breakfast away from home, it is terrible to think that their day is starting off with sugary cereals and greasy foods. At least with your muffins, you can pack them in the car and eat them on the way! After all, breakfast is the start to a great day!

      A few morning each week, I make my daughters the breakfast burrito mentioned in this article. It only takes a few minutes to whip up and clean up. Sprinkling bacon bits or dicing ham makes for a nice variety! I am a working mom and my girls appreciate the effort (or lack there of!) that goes into their breakfast!

      Another good make ahead we do is mini-quiches. Basically you spray your muffin tin with pam, or use papers, then put in beaten eggs. Different things can be added depending on the taste of the kid's such as cheese, bacon, sausage, veggies and so forth. If you have veggie haters some pureed cauliflower or pumpkin can be easily hidden in with the eggs. Bake in the oven and store in the fridge. You have a protien filled breakfast that can be eaten cold or reheated in the microwave.
