Another easy tip you can use to keep summer meals interesting is to do theme nights. Theme nights force you to get creative. While you may be able to come up with Mexican and Italian meals for the first few weeks, eventually you will need to seek out new recipes, which can make things even more fun. You can even have crazy themes that appeal to the kids. The idea is to just have fun.
