Parenting Guru: The French Waffle, an easy healthy breakfast

Okay Shine Readers, I'm going to share with you one of my best mommy secrets.

My daughter eats an egg and a slice of whole wheat bread everymorning and is happy to do it. And a piece of sausage. Without nitrites, of course.

We try to avoid refined carbohydrates in our house, and of course limit sugar. I'm a big believer in protein, and think eggs are just about the perfect food. I want my daughter to have a hot breakfast every morning but finding something she will eat and I am satisfied with nutritionally can be a challenge.

Our answer?

The French Waffle.

I should probably trademark that.

The French Waffle is a healthier combination of waffles and french toast. Here's how you do it:

Ingredients:

  • One slice of whole wheat bread. I like Nature's Own 100% Whole Wheat because it has less sugar and does not use high fructose corn syrup like many others do.

  • One egg

  • A dash of vanilla (optional)

  • A dash of milk or cream (optional)


Preheat a waffle iron. Beat the egg with the vanilla and milk. Soak the bread in the mixture until it has all absorbed into the bread. It helps if you poke the bread with a fork. Place the soaked bread on the waffle iron and cook until done.

I do butter it and put a little powdered sugar on it, so it's maybe not perfect, but I think it's a good compromise. Delicious!
