A diagnosis of celiac disease, which affects more than 200 million people in the United States, doesn't have to be a death sentence for people who love to eat. But intolerance to gluten (a protein in wheat, rye, and barley) does mean keeping an eye on ingredients lists and employing some creative cooking.
