      Save and print the recipe on Food52.

      Serves as many as you wish

      1 fish per person, like trout or seabass
      1 potato per person, peeled & cubed
      1 clove of diced garlic per fish, plus extra for potatoes
      1 rosemary sprig per fish, plus extra for potatoes
      Salt, pepper & crushed red pepper to taste
      Olive oil

      1. Preheat oven to 375F. Coat the bottom of a roasting pan with olive oil. ... more

      1 rosemary sprig per fish, plus extra for potatoes
      Salt, pepper & crushed red pepper to taste
      Olive oil

      1. Preheat oven to 375F. Coat the bottom of a roasting pan with olive oil. Add diced potatoes & season with salt, pepper, crushed red pepper, a handful of minced garlic & rosemary stems.
      3. Rub olive oil on skin & in cavity of each fish, season with salt & minced garlic, and lay fish in the pan on top of potatoes. Place a rosemary spring inside each fish.
      4. Bake for 30 minutes, stirring potatoes once or twice. Serve. less
