Combine ground beef with finely chopped shallots, shredded carrots, finely chopped reconstituted and drained dried mushrooms (or cooked shiitake mushrooms), grated fresh ginger and enough beaten egg to form a sticky mixture. Combine ground beef with finely chopped shallots, shredded carrots, finely chopped reconstituted and drained dried mushrooms (or cooked shiitake mushrooms), grated fresh ginger and enough beaten egg to form a sticky mixture. Spread in a thin, even layer on a sheet of nori, then roll up tightly to form a roll, brushing the edge with water to seal. Pan-fry immediately, partially covered, in vegetable oil until crisp and the meat is cooked through. Cut the roll on the diagonal into thirds and serve with store-bought sweet chili dipping sauce. less
