"Pretending I'm In Paris" Cous Cous
The first time I went to Paris, I was trying to outrun a broken heart. I spent the entire time eating croissants and drinking red wine. When I did eat anything else, it was this shrimp cous cous thing that I found at a lot of the Monoprix supermarché.
1 box of couscous
20 mini shrimp
1 red pepper
1 yellow pepper
Dressing recipe (which I got from my sister):
1 clove minced garlic
1 tablespoon Dijon mustard
1/2 cup olive oil
1/4 cup apple vinegar (moderate this portion depending on your vinegar tolerance)
Pinch of sea salt and pepper
Cook cous cous as instructed on the box, then cover it and put it in the fridge. In the meantime chop the peppers, make the dressing and toss it all together with the shrimp. Add the chilled cous cous and you're good to go.
