Solution: "For fish, it has to be the second day after you buy it. The whole point is freshness," Parkhurst says. "For pork or beef, it could be four or five days, but you have to look at the package. You do have more time than you think." Check for discoloration and see if the meat is still springy to the touch. Or cook it in advance to buy yourself more time.
