Preparation
Chipotle Ketchup
Mix ketchup, 2 tsp. vinegar, and chiles plus adobo sauce in a small bowl. Season with salt and more vinegar, if desired. DO AHEAD: Can be made 3 days ahead. Cover and chill.
Burgers
Shape beef into six 3/4-inch-thick patties. Season patties on both sides with salt and pepper. Preheat the panini press to 375 degrees. Working in 2 batches, transfer burgers to press; close press. Cook burgers until medium-rare, about 6 min less
