1/2 cup balsamic vinegar
1/2 cup dry white wine
2 Tbsp. fresh lemon juice
2 Tbsp. (packed) dark brown sugar
Kosher salt and freshly ground black pepper

Grilled Salmon Fillets with Balsamic Glaze

Preparation
Combine first 4 ingredients in a medium saucepan. Boil until reduced to 1/3 cup, about 17 minutes. Season glaze to taste with salt and pepper. DO AHEAD: Glaze can be made 1 week ahead. Cover and refrigerate.
Rewarm over low heat before using. Preheat the panini press to 375 degrees. Brush salmon lightly with oil; sprinkle with salt and pepper. Place salmon skin side down on press (do not crowd); close press. Cook until just opaque in center, about 5 minutes. Transfer salmon to a platter. Drizzle glaze over.
