Grilled Sausages in Pita Bread

12 sausages (such as Italian hot and sweet, or fully cooked varieties like chicken or kielbasa)
6 pita breads, halved
1 head of baby romaine lettuce, leaves separated, or one 5-oz. bag mixed baby greens
Assorted mustards and other condiments
Preparation
Preheat the panini press to 350 degrees. Working in 3-4 batches, place sausages on press (do not crowd); close press.
Cook Italian sausages until cooked through, 10-12 minutes. Cook fully cooked sausages until heated through, about 6 minutes. Transfer sausages to a platter; slice in half lengthwise and crosswise. Cover to keep warm.
Warm pita, if desired, in oven or microwave. Fill pita halves with lettuce. Place sausage halves atop lettuce in each pita half; serve with mustard and other condiments.
