padrinos or honorary godparents of Baby Jesus, and are expected to bring tamales to the February 2nd celebrations. Here's a festive tamal option that adds sweetness to the Candelaria table.
BERRY TAMALES
(Serves: 10-12)
Ingredients:
½ lb. butter
7 egg yolks
1 can condensed milk
3 cups rice flour
1 tbsp baking powder
1 cup sugar
¼ cup cream cheese, sliced
1 cup blackberries
½ cup blueberries
10-12 hojas para tamales (tamal corn husks available at all Latin markets)
