Mango Avocado Superfood Quinoa
Ingredients:
3 cups cooked fluffy quinoa
1/2 cup chopped kale
1/4 cup chopped parsley
1/4 cup chopped cilantro
1-2 limes, squeezed + a bit of grated zest
1/4 tsp fine black pepper
1-2 Tbsp nutritional yeast
2 Tbsp ground flax seed
2 Tbsp hemp seeds
1 cup diced avocado
3/4 cup diced mango
1 Tbsp goji berries soaked in lime juice and a pinch of salt

2 Tbsp ground flax seed

Directions:
1. Toss cooked quinoa with all the ingredients.
2. Fold in the avocado, mango and goji berries last. Garnish with lime wedges.
