I love pasta and I love vegetables. And I love combining them into one dish. In my mind, a delicious pasta laden with loads of spring vegetables is one of the best easy, healthy dinners for spring. Not only is it a great way to enjoy the flavors of the new season, it is also a great way to enjoy vegetables in a different way. In fact, my daughter will only eat arugula when it it is wilted into noodles. She wouldn't be caught dead eating an arugula salad!
