Many higher-end bars across the country are pouring their cocktails over sphere-shaped or super-sized cubes, standard in Japan-where cocktail-making is high art. "The bigger the cube, the slower it melts," explains DeGroff , and the longer your cocktail will keep its integrity. Many of the fancier refrigerators make quality ice cubes, he says, especially those with the built-in water filters. But if yours is an older model, it's definitely worth investing in some Tovolo ice cube silicone molds. For clear, quality cubes, make sure to use filtered water. Unless you plan on entertaining far from the kitchen, don't bother spending money on an ice bucket.
