Your favorite pizza dough, or use the recipe listed here
2 bunches radishes
Salt
Olive oil
2 cups grated Grana Padano
3/4 cup grated Pecorino Romano
2 teaspoons freshly ground black pepper

2 bunches radishes
Salt
Olive oil
2 cups grated Grana Padano
3/4 cup grated Pecorino Romano
2 teaspoons freshly ground black pepper

1. Preheat oven to 425F. Slice radishes into 1/2 inch thick rounds. Toss with a bit of olive oil and salt in a baking pan and roast until soft and golden (15-20 min.). Remove from oven and set aside.
2. Preheat a pizza stone in a 475F oven for 30 mins.
3. Divide dough in half and stretch into rounds. Transfer to a pizza peel that is sprinkled with cornmeal. Brush with olive oil. Divide cheeses, radishes & pepper evenly over both. Transfer to stone and bake for 9-10 min. Remove to cutting board, slice, and serve. less
