Easy, Cheesy Enchiladas
Ingredients:
6 cups sharp cheddar cheese
1 can steak chili
1 cup red enchilada sauce
8 corn tortillas
Directions
1. Spray a 9×13 inch baking dish with nonstick cooking spray.
2. Microwave the corn tortillas for about 60 seconds, just until the tortillas are soft and warm.

Easy, Cheesy Enchiladas

Directions
1. Spray a 9×13 inch baking dish with nonstick cooking spray.
2. Microwave the corn tortillas for about 60 seconds, just until the tortillas are soft and warm.
3. Sprinkle a bit of cheese inside each tortilla, then fold the tortillas in half. Lay the tortillas in your pan, overlapping them slightly.
4. In a small bowl, stir together the chili and enchilada sauce.
5. Spread across your tortillas then sprinkle the remaining cheese on top.
6. Bake in an oven preheated to 400 degrees for 20-25 minutes. Serve with sliced avocados.
