Pumpkin Pancakes
Ingredients
2 cups all-purpose flour
1/4 cup brown sugar
2 teaspoons baking powder
2 teaspoons baking soda
1 teaspoon salt
1 1/2 teaspoon pumpkin pie spice
2 cups buttermilk
1/2 cup pumpkin puree
2 extra large eggs
2 tablespoons melted butter

Pumpkin Pancakes
Ingredients

1 1/2 teaspoon pumpkin pie spice
2 cups buttermilk
1/2 cup pumpkin puree
2 extra large eggs
2 tablespoons melted butter
Directions:
1. Heat griddle over medium heat. Whisk together the dry ingredients. Separately, whisk together buttermilk, pumpkin puree, eggs and melted butter. Add to dry ingredients and whisk to combine.
2. Pour 1 tablespoon of oil on the griddle and spread. Pour batter, 1/4 cup at a time, onto the griddle.
3. When the pancakes bubble and the edges look dry after about 2-3 minutes, flip and continue cooking on the other side until cooked all the way through. Serve hot with warm maple syrup or whipped cream and chocolate chips.
