I've never thought of eggs as just a brunch order--they take only a couple minutes to cook, so there's no need to relegate them to weekends only. And once you ditch the hollandaise butter-bomb, this riff on eggs Florentine is a healthy way to kick off a workday. It offers a ton of greens (three cups!), and all that eggy protein means I'm not searching for a snack by 11:00...

And once you ditch the hollandaise butter-bomb, this riff on eggs Florentine is a healthy way to kick off a workday. It offers a ton of greens (three cups!), and all that eggy protein means I'm not searching for a snack by 11:00 a.m. It's also a good fridge cleaner; spinach is the best, but whatever green I used in last night's dinner is great, too. Regardless of the exact ingredients, it never takes more than five minutes to make. And then I'm off to work feeling like Popeye.
