normally, but still, it's a steadfast condiment that always hits
the spot when I need it. But I figured I give this soy-based vegan

Japanese Potato Salad

I looked through the cookbook and flagged a few recipes I wanted to try, including this Japanese Potato Salad. It sounded like it was going to be really good! Unfortunately, the way it turned out for me, it was just so-so, but I have a feeling this recipe would have turned out considerably better if I had more kitchen experience (have I ever steamed/boiled potatoes? No...).

Not just for Easter - my mom would make it for birthday parties, New Year's Eve, and at any other celebration that us kids would beg her to make it! It's such an easy recipe... all you have to do is toss everything in the blender! And I will swear to you... this is the BEST spinach dip recipe in the world. Hands down. Like I said - it's so easy, so just try it out and see!
