I’m very skeptical of promises that sound too good to be
true.

No field is as rife with these as the diet industry, where new
dream diets are invented daily and claim to have found a magic
trick allowing us to eat as much as we want yet lose weight.

But…

cannot stand it in any way, raw, steamed or stir fried. It makes me

align="left" height="400" width="400">A few months ago, my mom made
Brussels sprouts and made me swear I'd try them. I felt like I
was ten years old. Except that when I was ten, I didn't have to
try Brussels sprouts. Maybe since I am a lot less picky than I was
when I was a kid at the dinner table, or maybe since my mom likes
to wrangle me into eating heaps of vegetables with her, I agreed to
try them that night.

Really, there was no way I could hate them. My mom roasted them
with what she said was "an embarrassing amount" of butter
and salt, and then sprinkled them generously with hazelnuts. They
were delicious.

Roasted Broccoli

align="left" height="333" width="500">

I've said it before, and I'll say it again. I am not a
vegetable fan. I was the girl who would never eat her vegetables,
and everyone knew it.

Now that I'm older, things are changing. Lucky for me (well,
for my health) my boyfriend won't take any nonsense when it
comes to me eating healthy, so I don't have much of a choice.
To make life a little more enjoyable for myself, I've tried to
find vegetable recipes that I actually enjoy, rather than having to
force them down.

The credit for finding this recipe goes to my sister. She'll
randomly send me links to recipes that she wants me to make for
her, and this was one of the better ones... in fact, just plain
amazing! Sure, broccoli used to be one of the only vegetables
I'd eat, but I certainly wouldn't go out of my way to eat
some when I was younger. Who would've ever known I'd crave
broccoli? Recipe adapted from Amateur Gourmet. The recipe for the
tuna cake sandwich seen in the background can be found on my food
blog,

No matter how carefully you plan your weekly shop, by
Friday your crisper has turned into a sorry collection of orphaned
mushrooms and onion halves. Before your lettuce is liquid, fuel a
little creativity with your waste-based guilt with any of these
easy vegetable recipes. Just about any leftover vegetables work but
toss out anything moldy or smelly, and cut sprouts off potatoes,
garlic, and onions. <a rel="nofollow" href=
