    Ingredients:

    3 zucchini, sliced into strips
    1/2 cup flour
    1/2 cup cornstarch
    1 teaspoon salt
    pepper to taste

    Beer Battered Zucchini Fries:

    Ingredients:

    3 zucchini, sliced into strips
    1/2 cup flour
    1/2 cup cornstarch
    1 teaspoon salt
    pepper to taste
    2 eggs
    1/2 cup beer or milk
    Oil for frying

    Directions:

    Heat oil in a large, deep-sided pan on your stove over medium heat. In a small bowl, stir together the flour, cornstarch, salt and pepper. In a second bowl, whisk together the egg and beer (or milk). Dip the zucchini in the egg mixture, then in the cornstarch mixture, back in the egg mixture, then finally back into the cornstarch mixture. Your fingers will be messy. Hang in there. It's worth it! Gently transfer batter-coated zucchini into the hot oil. Fry just until golden brown. less

      My after-school snack was a sacred ritual. I sat on the carpet in my parents' bedroom at a low table, the television turned to "I Dream of Jeannie," and ate a peanut butter and honey sandwich cut into neat squares. I wasn't fussy about crusts. I just loved the sticky pairing of creamy peanut butter with syrupy golden sweetness drizzled from a honey bear in diagonals across the soft white bread.
