The average price for dried beans is off. They are over 2 dollars a 1 lb bag in my area, which is way more than .13 a cup.
I use them , and yes they taste better. But I don't know that I save all that much.

wow this is totally out of touch. MD $1menu=suicide..you aren't smart enough to soak the beans overnight before you cook them?.....chicken pot pies, healthy??? come on they are processed heaven, they came out at a time in our history we through away our health, frozen processed foods are death traps, oleo margarine, crisco, all that stuff is so bad for the body...and what idiot doesn't know the food stamp gimic, these people can eat like kings, don't kid yourself if they need more grocery money they just go out and get pregnant and have another illegitamate child, pay attention when in line at the grocery store....standing rib roast, lobster, endive, escarole, asparagus just to name a few of the delicacies I have witnessed food stamps used for, while I the tax payer that foots the bill for these slobs food stamps is buying marked down catfish nuggets and a head of lettuce. Don't kid yourselves, the food stamp slobs will continue to eat like kings while the rest of us will be growing our potatoes out of old garbage cans on our patios during this next wave of economical crisis, and the food stamp slobs are the ones that voted for the crooked commi politicians putting us through all this!!!!!!!!

Really sucks that this author felt the need to take a cheap shot at Courtney Love for absouletly no reason at all. Doesn't sell me on the idea that eggs are good for me, just makes you sound like a jerk. I thought we were all supposed to be on this anti-bullying kick anyway? I really think an apology is in order to Courtney and her fans.

You don´t have to let dried beans soak overnight. You can bring them to a boil and then simmer for 2 minutes, remove from heat and then cover tightly for one hour. Then boil as usual. From the ´Joy of Cooking´ (The bible of cooking)

Buy in bulk? I did that once and before, and half of the veggies and fruits went bad before I got to eat them fast enough.Very expensive, and then what a waste. Now your stuck with no food or income for the next few weeks and forced to go to a food bank where they give you a bunch of process foods. So buying in bulk doesnt seem to be the way on a very limited fixed income.

I cook most of my food from scratch ,aka recipes .The best cook books to buy is the older ones ,before 1970's .And buying generic or a off brand isn't always better.Because some times they just don't taste the same or taste right.I shop at the different dollar stores ,because some times there food stuff is cheaper. And I don't like beans ,unless there green beans, chilli beans and baked beans.I tried to eat dried beans cooked but I just can't. I don't like the taste.I love veggies. My favorite is fried cabbage and noodles.Yummy. and it's cheap to make. And I love meat.I love fruit ,but it costs so much. And some fruit is hard to keep fresh for long.I sure with the prices would go down.If they did more children could eat better. and so could older people. It's a shame a candy bar is cheaper then one apple.

I disagree on the pre-cut fruits and veggies. Most of us get overly enthusiastic and buy veggies we end up throwing away because we did not have the time or energy to follow through with that meal we planned this is why I love frozen but sometimes fresh is best and if you are notorious for throwing things away you will end up saving in the long run if you buy just a couple pre-cut items. This is also recommended by many health Gurus because you are more likely to eat those fruits and veggies if they are easy to eat. If you throw away $10 or more a month in rotten food why not just spend that on something you'll actually use.

I swear by Trader Joes they have the best variety of cheap often organic fruits and veggies and a great assortment in the frozen section. I can buy a bag of wild or Organic blueberries for 2.99
pre-cut frozen Mangos for 1.49 and Organic frozen peas for less than $2

On the Fresh side a Bag of Organic apples 2.50-$4
      6 organic lemons $2
3 heads Org romaine lettuce 2.49
      pre-cut Mirepoix 2.50

Vegetarian Hindu's get their protein from lentils their whole life....most don't eat anything from fish to eggs involving coming from an animal except maybe milk while some groups do not even include that in their diets!

Foods that 'fill you up fast' last about an hour, then you're hungry again. Sauce from tin cans taste just like that...tin can-ny. Beans s*ck, in my opinion, and I'd rather have anything but chicken all of the time.

Since everyone who posted here knows how the internet works, there are thousands and thousands of recipes to be had from all cultures to help you cook that inexpensive roast, on-sale veggies, pasta (very cheap), and so on. Did you know you can make your own tomato pasta sauce for $2.00 that feeds six in under 30 minutes? Do some intelligent surfing and check out the recipes. You don't have to be a chef to prepare healthy meals on a budget!

It's still difficult when your food budget is $114 for 2 people for a whole month! I do cook from scratch, learnt it from my mother and we rarely buy meat but it's still next to impossible to eat really healthy on a tiny budget, many no name brands just don't taste right and I'm sure many here would agree to that. Health problems and special diet requirements aren't even put into consideration with the suggestions given by the author.

I'm a hobbyist cook(I'm 41) because I wanted to cook the great-sounding stuff in the books I was reading for class, and also for health and budget. I soon acquired a routine of cooking a batch of something about once a week, gaining experience and confidence as I went. I started out experimentinng with additions to eggs, potatoes, grilled cheese and pasta; in the seventh year, I made Duck l'Orange(duck w/orange sauce) for Easter. Stuff was gone by Tuesday, yum!. lol That was ten years ago. I'm not quite up to Beef Wellington or Baked Alaska yet, but I'll probably get there someday.

The little grocery store down the street has chicken breasts for $1.88 a pound, I'm sure that's more the norm. I do buy other cuts of chicken for variety on occasion, but I figure by the time I pay for the bones I don't eat, the skin I usually don't eat, all the tendons I don't eat and just the hassle of eating around all that.... it's probably cheaper all things considered to buy the breasts.
