    Recipe Tips:

    Prep Easily

Halving peaches, plums, and nectarines is easy with this trick: Just make a deep horizontal cut all the way around the fruit, twist gently, and remove the stone with your fingers.

    Peel Easily

Peeling stone fruits is also a breeze. Cut their skins to get them started, then drop them briefly in boiling water and transfer them to an ice bath. Their skins should slip off easily. After peeling, immediately return them to the ice bath, which prevents discoloration.

    Get More Flavor

Letting stone fruit cool in their poaching liquid makes for a more flavorful dessert.
