    5 Bigger (and Better) Burgers

    Make the Perfect Burger

    Ketchup, fine. Cheese, sure. But why not take your patties to a happier place with surprising fixings that will please every palate? No matter which of the following five fabulous burgers you cook up, these grilling tips will guarantee patty perfection. Photo credit: iStock

    1 Heat grill to medium-high. Start with 1 1/4 lb ground chuck (we like 85% lean) and gently form into 4 balls. Don't overwork the meat-this can result in a tough, dry burger.

    2 Flatten each ball into a 3/4-in.-thick patty. Make sure the top and sides are the same thickness throughout.

    3 Using your thumb, make a shallow 1½-in.-wide indent in the top of each patty (this will help the burgers maintain their shape while they cook). Season the patties with ½ tsp each salt and pepper.

    Lightly oil the grill. Place the patties on the grill, indent-side facing up, and cook until the burgers release easily from the grill, 4 to 5 minutes (don't press or flatten-this will dry them out). Flip and cook 4 to 5 minutes more for medium. Top as desired.
