Easy Meatloaf Recipe

What is more comforting on a cool night than roasted fingerling potatoes and rosemary with a nice big slice of meatloaf? Not much.

This easy and utterly delicious recipe is inspired by a recipe of my grandmother's. While she grates her onions, so you can't detect the texture, I instead opted to sauté a finely diced onion and then combine it with fresh herbs for a new twist.

You could cheat and top the meatloaf with ketchup, like many "easy" meatloaf recipes suggest, but the cloyingly sweet topping is nowhere near as delicious as a homemade topping.

Serve with those crisp-roasted potatoes and some roasted broccoli. Comfort food at its finest!

Meatloaf Gets a Makeover: Rice and Lentil Loaf Recipe

Most everyone has an opinion about meatloaf. Some love its homey comfort made from their mom's recipe. Some think of it as a heavy-duty boring blast from the past. Some would never eat it. Enter rice and lentil loaf with mass appeal!

Whether you're a meat eater, vegetarian or trying to cut meat from your meals more often (think Meatless Monday), this loaf is a great option for you to try.

Whatever your opinion of the classic dish, this recipe is meatloaf-like enough for fans, but different enough for meatloaf foes. The addition of rice, lentils and vegetables makes it a healthy dish, and although it has almost the same texture as meatloaf, it gives you the chance to try something a little out-of-the ordinary.

Turkey Meatloaf Recipe (pictured above)

For a healthier option, replace the beef with turkey for a delicious meatloaf.

INGREDIENTS

1/4 cup plus 2 tablespoons ketchup
2 teaspoons Worcestershire sauce
1 small onion, diced
1 teaspoon olive oil
1 1/2 pounds lean ground turkey
1/2 cup seasoned breadcrumbs
1 egg
1 teaspoon Italian seasoning
Salt and pepper, to taste

DIRECTIONS

Preheat the oven to 350 degrees. In a small bowl, combine the 2 tablespoons ketchup with Worcestershire sauce.

In a medium skillet, heat the olive oil over medium-high heat. Sauté the onions until translucent.

In a medium bowl, mix together the turkey, sautéed onion, breadcrumbs, egg, 1/4 cup ketchup, Italian seasoning, and salt. Place mixture into a loaf pan and shape to fit. Spoon the reserved sauce over the meatloaf.

Bake uncovered for 55-60 minutes, remove from oven, and let it sit for 5 minutes before slicing.
