5 Ways to Cook with Coffee

    --By Julia Bainbridge, Bon Appétit

Most of us begin the day with a piping hot cup of coffee. But what about ending it with a coffee-infused dinner or dessert? Its rich flavor adds depth to burgers and zing to baked goods, and almost like salt, coffee enhances the flavors of other ingredients. It may also contribute to a lower chance of developing cancer and diabetes. So drink (and eat!) up, starting with these five delicious coffee-laced recipes.

    1. Try making Coffee Crunch Bars (see recipe below). Just a couple of spoonfuls of espresso powder give this recipe, which makes 48 bars, plenty of zing.

    2. Spice up your grilling routine with Coffee-Marinated Bison Short Ribs. Maple syrup sweetens the coffee marinade slightly, and the sauce gets a kick thanks to a jalapeno chile. (Don't miss the how-to video for this recipe.)

    3. Treat family and friends to
Coffee-Caramel Creme Brulee. The custard in this clever creme brulee tastes just like a rich caramel cappuccino.

    4. Give Candied Espresso Walnuts as gifts. They're delicious after dinner with--what else?--coffee.

    5. And, lastly, who could resist a
Coffee-Rubbed Cheeseburger with Texas Barbecue Sauce? Freshly ground coffee adds depth to the spice rub and brings out the flavor of the meat in these burgers.

    Ingredients

    • 2 cups all purpose flour
    • 1/2 teaspoon baking powder
    • 1/4 teaspoon salt
    • 1 cup (2 sticks) plus 2 tablespoons unsalted butter, room temperature
    • 1 1/4 cups (firmly packed) dark brown sugar
    • 2 tablespoons instant espresso powder
    • 1/2 teaspoon almond extract
    • 1 cup semisweet chocolate chips
    • 1/2 cup sliced almonds

    Preparation

    • Preheat oven to 325°F. Whisk first 3 ingredients in medium bowl to blend.
    • Using electric mixer, beat butter and sugar in another medium bowl until blended, about 2 minutes. Add espresso powder and almond extract; beat 1 minute. Stir in flour mixture in 3 additions, mixing until just absorbed after each addition. Stir in chocolate chips and almonds (dough will be thick).
    • Turn dough out onto ungreased rimmed baking sheet. Using hands, press dough into 12-inch square. Pierce all over with fork at 1-inch intervals.
    • Bake until edges are lightly browned and beginning to crisp, 45 to 50 minutes. Cool on sheet 1 minute. Cut into 48 bars. Immediately transfer to rack; cool (bars will crisp as they cool). DO AHEAD Can be made 5 days ahead. Store in airtight container at room temperature.

How long ago did Yahoo post an article about Americans having bad eating habits? Just out of curiosity.

Also, if you add coffee, either a little brewed or instant coffee crystals to chocolate cake batter it really intensifies the flavor. You don't taste the coffee but it really makes the chocolate flavor POP.

There is no actual coffee in the coffee crunch bar recipe here. Instant espresso powder is not coffee. What a silly thing.

I have been using Coffee Primero coffee when I cook with coffee because they use a process developed at the University of Florida for making a coffee that mimics how nature creates Kopi Luwak, so it has no bitterness and a really nice aroma and flavor.

I use strong black coffee in a number of recipes as my "secret" ingredient. Spaghetti sauce (or zucchini and tomatoes) ... and in beef or pork stew, adding a little strong coffee adds a rich tone to the gravy that just can't be beat.

My MIL use to make a coffee pot roast. It was absolutely delicious! Only problem is that the caffeine would keep you up all night.

I've been using coffee grounds as part of my rib recipy for years.

coffee grounds are also great for cleaning oven trays, pots and pans. Just toss some in during the cleaning soak and they break everything up real nice. Makes clean up alot easier.

I freeze left over coffee in an ice tray and use it for iced coffee (won't dilute). Also using fresh brewed coffee to a chocolate cake mix makes it have more flavor and a bit of bite. Coffee colors darkens the roux for gumbo and beef gravies. It adds flavor to any dark pie--pecan, pumpkin or butterscotch. No one ever guesses the secret!

Perfect rub for a flank steak -- equal parts of salt, brown sugar, and ground coffee (not used grounds). Rub flank steak, refrigerate overnight. Take out and allow to set at room temp for 30 minutes then grill to preference.

If you want a great tasting stew instead of water add a fresh brewed pot of tea. no sugar or lemon.the difference is very suttle but good enough to notice.

I use Coffee (Left over in the pot or make one just for this) as the liquid for Crock Pot - Pot Roast.
Put Pot Roast into crock pot....Add Coffee....enough to cover the meat....then add Bay leaf and spices...plug in and leave it.....about one hour from being done add potatoes cut into 1/4's and carrotts (Cut or baby).....one hour later, once done (falling apart) I thicken with starch or flour. Very tasty!
