    6 Scrumptious Things to Do with Fresh Corn

    corncornSummertime! It's hotter than Satan's breath around here, but at least we have corn. Fresh cobs of sweet, juicy corn. And if you love picking stuff out of your teeth as much as I do, then corn on the cob is on the menu -- today and every day. But! That's not your only option. There are so many other delicious ways to eat fresh corn. Here are six tasty ways to enjoy the golden nibblets of summer.

    Summer Corn and Tomato Salad: This corn salad recipe has tomatoes, peppers, and a spicy kick to it. If you want to tone down the spice, just use regular bell peppers instead of poblano. But I think corn really sings in spicy dishes.

    Grilled Corn Salsa: Speaking of spicy corn, I love a good grilled corn salsa. This one looks super simple.

    Corn Chowder: Let's just suppose, hypothetically, that one day it's actually cold enough for soup. It could happen! Some cozy corn chowder might hit the spot.

    Corn Fritters: I do love me some fried corn fritters! Top with sour cream and tomatoes -- or heck, straight out of the pan with your hands.

    Corn Stuffed Onions: For real -- this looks amazing. The stuffed onions recipe is actually part of a larger recipe for adobo grilled pork, which also looks great. You're just grilling half onions, sauteing corn with goat cheese, and then putting it all together.
