    Blueberry Chia Seed Bread
    This healthy vegan snack is packed with flavor and protein. The kids will love the fruity flavor and moist texture while you'll love the healthy brain boost it gives them mid-day.

    Make blueberry chia seed bread
    Ingredients:

    2 cups whole wheat flour (or use half white, half whole wheat for a silkier texture)
    1/2 cup agave syrup
    1 cup soy milk, vanilla
    1/2 orange juice +1/2 tsp orange zest (or just use 1/2 cup water)
    1/3 cup vegetable oil
    2 Tbsp chia seeds
    1/2 tsp salt
    2 tsp baking soda
    1 Tbsp baking powder
    2 tsp apple cider vinegar
    1 1/4 cups fresh organic blueberries
    optional: 1/8 tsp cayenne and/or 1/2 tsp ginger powder (for a spicy accent)

    Directions:
    1. Combine the dry ingredients in large mixing bowl.
    2. Fold in wet ingredients. Fold in blueberries last.
    3. Pour mixture into greased baking dish.

    Finding the perfect afternoon snack for school can be a hard task. With sugar-laden cookies and crazy fruit roll-ups as temptations, carrot sticks and and apples don't always cut it...and often find their way back home untouched. But I have found the perfect snack in zucchini bread and banana bread. Made with healthy fruits and veggies I feel good packing it in my daughter's lunch and the delicious taste rivals any packaged junk food she could get at school.
