    7 Ways to Cook with Brussels Sprouts

    I'm a lonely lover of brussels sprouts in my household. Thankfully my mother-in-law loves these cute, little, round veggies, too, so we can enjoy some of these delicious recipes I rounded up here today, together. I've learned that brussels sprouts make people very passionate … in either a love 'em or hate 'em kind of way. Where do you stand?

    From the looks of the recipes that I've gathered here, most people love to roast their brussels. Sauteed, shredded, and in salads are other popular ways to serve them. And boy is my mouth watering at the sound of a couple recipes that pair brussels with blue cheese, pecans, cranberries, and bacon.

    1. Roasted Brussels Sprouts with Bacon and Pomegranate
    My favorite way to eat Brussels sprouts is roasted with bacon. Luckily, this is also the easiest way to make them. And though they taste great right out of the roasting pan, I often finish them with a splash of balsamic vinegar or lemon juice and zest. I like the way the acid picks up the flavor.

    Ingredients:

    • 2 pints Brussels sprouts, cleaned, trimmed and halved
    • 3 thick cut strips bacon, chopped (about 1/2 c chopped)
    • 3 Tbsp olive oil
    • salt & pepper
    • 3/4 c pomegranate seeds
    • drizzle of balsamic vinegar, optional

    Directions:

    1. Preheat oven to 375 degrees. Toss Brussels sprouts with bacon, olive oil, salt and pepper. Roast for about 45 minutes, or until they are cooked through and caramelized and crisped in spots.

    2. Toss roasted sprouts with pomegranate seeds and a drizzle of vinegar. Enjoy!
