    A-List Dinner Ideas From the Sundance Film Festival

    This weekend, celebrities will flock to Park City, Utah, for the Sundance Film Festival.

    Our invite must have gotten lost in the mail, but we did manage to sneak a peek at the menu for "ChefDance" -- five straight evenings of amazing eats prepared by some of the world's most amazing chefs for 250 A-list guests.

    We were really impressed with the way these chefs combine flavors and use healthy ingredients in unexpected ways. Here are three dishes we're most inspired by:

    The Starter: Winter Vegetable Soup with Farro and Parmesan Tomato Broth

    The Chef: Kerry Simon of CatHouse at the Luxor Hotel & Casino and Simon at Palms Place in Las Vegas

    What We're Stealing:
    Farro as a soup ingredient. It's sweet and nutty, and sturdy enough to stand up to the robust flavors of vitamin-dense winter veggies, including greens. Bonus: Farro is loaded with fiber and protein, so it keeps you feeling fuller longer.

    The Second Course: Roasted Beets, La Giola Burrrata Cheese, Pancetta, Hazlenuts, Suzie's Farm Clementines

    The Chef: Jared Van Camp, a Chicago-based chef who hosts and creates dinners at Kinnikinnick Farms, a 40-acre certified organic Market Garden in Northern Illinois.

    What We're Stealing: The salty-sweet combo of antioxidant-rich beets, vitamin-rich clementines and heart-healthy nuts is brilliant. The color combo topped with some bright white crumbled cheese would impress your pickiest dinner party guests!

    Main Course: Rabbit Tenderloin With Butternut Squash, Kale and Pine Nuts

    The Chefs: Billy Sotelo & Jared Young of LaSalle Restaurant Group in Salt Lake City

    What We're Stealing: We could take or leave rabbit tenderloin, but we're obsessed with the flavor combo of sweet butternut squash, savory kale and pine nuts. One serving of kale gets you 206 percent of your daily vitamin A and 134 percent of your daily vitamin C. Boo-yah!
